Chinese Chicken Salad Remix


Chinese Chicken Salad
(Low Fat)

Determined to make our meals as healthy as possible, I did a little Chinese Chicken Salad remix!  It is super easy and quick to make.  I baked the chicken breast while I was making the rest of the salad. Loved it!!  Eat your veggies, they are great for you and you'll feel great while still enjoying full flavor!  Biggest tip I have found to eating healthy is using my kitchen scale.  I love mine!!

Chinese Chicken Salad Remix

Less than 400 calories per serving
Serves 4

Ingredients:

4 T. low-sodium soy sauce, divided
2 tsp toasted sesame oil, divided
1 pound skinless, boneless chicken breasts
1/2 head napa cabbage, thinly shredded (about 6 cups)
1/4 head red cabbage, shredded (about 2 cups)
3 scallions, trimmed and thinly sliced, greens included (about 1/2 cup)
1 8-oz can sliced water chestnuts, chopped
1 11-oz can Mandarin oranges in water, drained
1/2 apple cider vinegar or rice wine vinegar
1 tsp minced garlic
1 tsp minced ginger
1 packet Stevia sugar substitute
1-1/2 tsp Sriracha sauce
1/4 C sliced almonds, toasted

Directions:

Preheat oven to 350 degrees F.

Combine 1 tsp soy sauce and 1/2 tsp sesame oil and brush onto chicken breasts. Bake until juices run clear, about 15 minutes.  Remove from oven, cool completely, and cut into 1/4-inch slices.

Meanwhile, in a large bowl, combine Napa cabbage, red cabbage, scallions, water chestnuts, and Mandarin oranges.  In a separate bowl (or your Vitamix), whisk together remaining 3 T. soy sauce, vinegar, garlic, ginger, remaining 1 tsp oil, Stevia and Sriracha sauce.  

Add cooled chicken to bowl.  Pour dressing over salad and toss to combine.  Divide among bowls and top each serving with 2 tsp toasted almonds.

Smoked Salmon on Cucumber Chips

Healthy and Delicious!

This was ridiculously easy and super fast to throw together!  Bright fresh flavors, perfect for a summer evening entertaining with friends.

Smoked Salmon on Cucumber Chips
The Chef In My Head

1 English cucumber, washed, and sliced on the diagonal
1 pkg sliced smoked salmon
Capers, rinsed and drained
1 pkg Laughing Cow Cheese, Garlic & Herb
Purple onion, small diced (optional)
Fresh dill sprigs (optional)

Spread about a teaspoon of softened cheese on one end and one side of cucumber slice, leaving a "handle" end to pick it up.  Top with smoked salmon and sprinkle with capers.  That's it, it's that easy!!

If not serving right away, it can be covered with plastic wrap and refrigerated.  Keep it good and cold until ready to serve!

Roasted Tomato and Asparagus Penne Pasta Salad


Roasted Tomato and Asparagus Penne Pasta Salad
The Chef In My Head, adapted from Cooking Light

2 cups uncooked whole wheat penne 
12 asparagus spears 
12 cherry tomatoes 
4 tablespoons extra-virgin olive oil, divided
3/8 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
1 tablespoon minced shallots
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon dried herbes de Provence
1 1/2 teaspoons honey
1/2 cup pitted kalamata olives, halved
2 cups baby arugula (rocket)/spring mix 
1/4 fresh Jicama, cut into matchstix
1/2 cup (2 ounces) crumbled goat cheese

1. Preheat oven to 400°.
2. Cook pasta according to package directions, omitting salt and fat; drain and set aside.
3. Place asparagus and tomatoes on a jelly-roll pan. Drizzle with 1 tablespoon olive oil; sprinkle with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Toss gently to coat; arrange asparagus and tomato mixture in a single layer. Bake at 400° for 6 minutes or until asparagus is crisp-tender. Remove asparagus from pan. Place pan back in oven, and bake tomatoes an additional 4 minutes. Remove tomatoes from pan; let asparagus and tomatoes stand 10 minutes. Cut asparagus into 1-inch lengths; halve tomatoes.
4. Combine shallots and the next 4 ingredients (through honey) in a small bowl, stirring with a whisk. Gradually add remaining 3 tablespoons oil, stirring constantly with a whisk. Stir in remaining 1/8 teaspoon salt and 1/4 teaspoon black pepper.
5. Place pasta, asparagus, tomato, olives, jicama, and arugula in a large bowl; toss. Drizzle juice mixture over pasta mixture; toss. Sprinkle with cheese.

Dried Fruits are some of the healthiest alternatives to refined sugar, and they are an excellent way to satisfy a sweet craving. While many manufacturers use the natural sugar found in fruit, called fructose, to sweeten their products, eating fruit itself in moderation is a great way to get needed nutrients and vitamins. Dried fruit is a quick and tasty way to get those same benefits during a busy, fast-paced day.

Nuts and Seeds, although energy dense and therefore high in calories, they can in fact be beneficial for weight loss.  Both of these foods are high in fiber and protein making them a filling snack option that will keep you satiated for a long time.  Not only this, but nuts and seeds are packed full of nutrients, making them a health super food, and hugely more nutritious than other popular snack foods.

Nutty Notes:
Healthiest Nuts & Seeds

According to the George Mateljan Foundation’s list of the world’s healthiest foods, the healthiest nuts include:

Almonds: High in vitamin E, magnesium, copper, vitamin B2 and phosphorus and concentrated in protein.  The majority of fat in almonds is heart healthy mono-unsaturated fat.

Cashews:  High in antioxidants, mono-unsaturated fats and phosphorus and with a lower fat content than many other nuts.

Flaxseeds (Linseed):  High in omega-3 fatty acids, beneficial for anti-inflammatory properties, as well as vitamin B6, fibre and manganese.

Peanuts:  High in mono-unsaturated fats, flavonoids, antioxidants, and folic acid.  They are also high in vitamin B3 and are thought to contain an antioxidant known as resveratrol, which is thought to have anti-aging effects.

Healthy Dried Fruit & Nut Balls

Approx. 30 balls

2 cups mixed dried fruit (I used prunes, strawberries, raisins, goji berries, bananas, cherries, cranberries) 
1-1/2 cups raw mixed nuts and seeds (I used walnuts, pumpkin seeds, sunflower seeds, sprouted almonds)
Cinnamon
Coarse sea salt
1/3 cup raw sesame seeds

In a food processor, pulse dried fruit; transfer to a bowl.

Pulse nuts and seeds until finely chopped and add to dried fruit with a dash of cinnamon and a pinch of salt.

Knead together and form 1-inch balls; roll each ball in sesame seeds.

Notes:  I used prunes for the obvious health benefits but also because they make good glue to hold balls together.  I find it helpful to dampen my hands to form balls before rolling them in sesame seeds.

Personally, I think Santa would like these!

Decadent Mushroom Soup

Mushroom Soup


The Rockin Vitamix soars again!  Really fast, delicious, creamy, deep and rich flavors and simply decadent.  Damn, this is really good!!

The fact that I can make a creamy soup without cream, never ceases to dazzle me!!

Soup-er easy....Here you go!

Decadent Mushroom Soup
The Chef In My Head
4-cup servings (very rich) as an appetizer or first course

1/2 stick unsalted butter
1 T. olive oil
1-8 oz. pkg. Cremini mushrooms, sliced
1-8 oz. pkg. White button mushrooms, sliced
1 large onion, sliced
3 green onions, sliced
1 carrot, diced
2 springs fresh thyme
1/8 tsp cayenne pepper
1 garlic clove, minced
Kosher Salt & Fresh Ground Pepper, to taste
juice of 1/2 lemon
1/2 Cup dry white wine
1-1/2 C vegetable stock
2 tsp. Chicken soup base (optional)

In a large saute pan, over medium heat, melt butter along with olive oil.  Add all ingredients with the exception of wine and stock.  Saute to allow all flavors to blend and vegetables to soften, not brown.

Add wine to deglaze pan.  Transfer mixture to Vitamix.  Turn on, rotate dial to 10 and switch to high.  Slowly add vegetable stock and soup base if using through lid.   Blend for 5-6 minutes or until heavy steam escapes top.

Pour into serving cups/bowls.  Garnish with Creme Fraiche or Sour Cream if desired along with fresh cracked pepper.  Enjoy!

Mango, Orange & Banana Smoothie!

First let's chat a bit about the amazing health benefits of our ingredients (Remember, this was part of my sales pitch to my husband to fork over the money for the Vitamix).  But it is true, we are getting the most out of our fruits and veggies now and I'm already seeing the difference in our skin and our energy levels are improving too!

Banana bana fo fama....Bananas:  Bananas consist mainly of sugars (glucose, fructose and sucrose) and fiber, which makes them ideal for an immediate and slightly prolonged source of energy

Mango, Orange & Banana Smoothie

Serves 2

1 Cup Ice
1-1/2 Cups fresh Mango, diced
1 Orange, peeled
2 ripe Bananas
1/4 Cup Greek Yogurt
1-1/2 T. Nopolina

Put all ingredients in the order listed above into Vitamix.  Turn machine on, turn dial to 10, and on high.  Blend to desired consistency and enjoy!

Moroccan Spaghetti Squash & Sweet Potato Soup

Spaghetti Squash & Sweet Potato Soup

The Vitamix is changing lives!!!   We are using this amazing machine at least two times per day, usually 3.  Today for example, breakfast was a fresh Apricot, Orange and Banana Smoothie!  Beautiful color and delicious too!

Serves 2

1 cup ice
4 fresh apricots, pitted
1 banana, peeled
2 oranges, peeled
1 T. Nopolina (optional)

Place all ingredients in Vitamix in order listed,  Turn on and immediately turn to 10 on dial and switch lever to high.   Blend to desired consistency and enjoy!!  

Too easy and too tasty!!

Lunch today is the beautiful and creamy soup.  I am going to pretend that it is not expected to be over 100 degrees outside.  
After standing with the refrigerator door open for about ten minutes, this is what I came up with.  Man I love this blender, it was so worth saving up for.  Changing lives here....changing lives.

Moroccan Spaghetti Squash & Sweet Potato Soup

Serves 6

1 3-4 pound spaghetti squash
1 large sweet potato, peel and cut into large cubes
1/2 large onion, sliced
2 cloves garlic, large dice
1/2 (4 T.) stick unsalted butter
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp cayenne (or to taste)
1/2 tsp tumeric (optional for added nutrition and color)
3/4 teaspoon salt
fresh ground pepper
1/2 of an orange, peeled
2 cups vegetable broth



Pierce squash (about an inch deep) all over with a small sharp knife to prevent bursting. Cook in microwave oven on high power (100 percent) for 6 to 7 minutes. Turn squash over and microwave until squash feels slightly soft when pressed, 8 to 10 minutes more. Cool squash for 5 minutes.


Place Sweet Potato cubes in microwave safe bowl and microwave on high power (100 percent) until tender when pierce with a fork, about about 4 to 5 minutes.



Meanwhile, melt butter in a small heavy saucepan over moderately high heat. Add garlic and onion and cook, stirring, until translucent, about 1 minute. Stir in spices and salt & pepper and remove from heat.  Add to Vitamix.


After Spaghetti Squash has cooled slightly, cut it in half, scoop out seeds and discard (or save to toast for garnish).  with a large spoon, scoop flesh of squash into Vitamix, reserving a small amount of "noodles" for garnish if desired.


Place cooked cubed Sweet Potato into Vitamix.  Toss in orange and 2 cups of Vegetable broth.  


Secure lid on Vitamix.  Turn on machine, turn dial to 10 and lever to high.  Add more Vegetable broth as needed.  Let machine remain running on high until you see a fair amount of steam escaping lid.


Pour into serving bowls, garnish and serve.


Unbelievably creamy and delicious!!
