Chive Cream Cheese and Cucumber Tea Sandwiches
Elegant in their simplicity, these chive cream cheese and cucumber tea sandwiches are ideal for a summer cocktail party, girls bunco or any occasion where a light and refreshing hors d'oeurve is welcome.
Chive Cream Cheese and Cucumber Tea Sandwiches
Makes 12 Sandwiches
24 slices white bread
4 T chopped chives
6 oz cream cheese, at room temperature
1 English cucumber, sliced into very thin rounds
3 T chopped dill
1. Using a 2-in round cookie cutter, cut out the center of the bread slices.
2. In a bowl, mixed the chopped chives into the softened cream cheese.
3. Spread the chive mixture on one side of 12 bread rounds.  Top with cucumber slices (about 3 slices per round), sprinkle with dill and cover with the remaining bread rounds.
4. Cover with plastic wrap until ready to serve.
