Healthy Herbed Lentils

post signatureWe thoroughly enjoyed these lentils as part of a three day juice cleanse as our dinner. Fresh bright favors!



Healthy Herbed Lentils

Makes 2 1/2 Cups

1 cup green, black or brown lentils
1 clove garlic, minced
2 1/2 cups organic vegetable broth (super easy to make your own)
1/2 Tbls fresh thyme, leaves only, minced
2 Tbls parsley, leaves only, minced
1 Tbls good olive oil
1 Tbls fresh lemon juice
Grated rind from one lemon

Place the lentils, garlic, and broth in medium pot and bring them to a boil. Reduce heat to a simmer and cover. Cook until lentils have absorbed all of the liquid, approximately 20 to 30 minutes. If the lentils are still too firm after they have absorbed all of the liquid, you can add a little more broth until they are tender. 

Allow the lentils to cool for 10 minutes.  Toss the cooked lentils with the thyme, parsley, olive oil, lemon juice, rind and salt and pepper. Serve.  This can keep for 4 days, stored in airtight container and refrigerated.
